Hinotsuki

Hinotsuki is a newly opened Japanese fine dining restaurant at the Grand InterContinental Seoul Parnas, offering authentic Kyoto-style kaiseki and sushi omakase from “Sushi Kanesaka.” The restaurant elevates the cycles of nature and the philosophy of wabi-sabi into a culinary experience. BAT and the hotel team redefined its brand identity to create an immersive experience, setting a new benchmark for high-end Japanese dining in Korea. Previously, the hotel’s in-house Japanese restaurant lacked a cohesive brand, but the redesign now delivers a unified and authentic experience.
